We watched a couple of very inspiring reels last night and realised that we're underselling our whisky when Chantal and I describe and talk about it. We have always tried to steer clear of wanky tasting notes that describe notes of '3-day old burnt vanilla muffins' but that doesn't mean we shouldn't have peoples mouths watering by the time we finish describing the whisky.  We agreed that we need to work through every stage of our process, (particularly in creating the new-make spirit) and describe what effect this has on the taste of the finished whisky....and steer clear of clichés!
